Man sollte nicht das gesamte Fett entfernen; etwa 6 mm der Fettschicht sind optimal und sorgen daf\u00fcr, dass das Fleisch beim R\u00e4uchern saftig bleibt.<\/p>\n<\/div><div class=\"fusion-text fusion-text-3\" style=\"--awb-text-transform:none;\"><p>Im zweiten Schritt wird der Schweinenacken f\u00fcr das R\u00e4uchern vorbereitet. Daf\u00fcr gibt es mehrere M\u00f6glichkeiten. Man kann ihn zun\u00e4chst in Salzlake einlegen. Dazu mischt man 4 Liter Wasser mit je 240 ml grobem Salz und Kristallzucker oder braunem Zucker, gibt etwa ein Dutzend ganze Pfefferk\u00f6rner hinzu und legt den Schweinenacken in die Fl\u00fcssigkeit. Anschlie\u00dfend l\u00e4sst man ihn 4 bis 24 Stunden in der Salzlake ziehen. Ger\u00f6stete N\u00fcsse, Oregano und schwarzen Pfeffer hinzuf\u00fcgen und k\u00f6cheln lassen, bis die N\u00fcsse weich sind. Alle Zutaten mit einem Stabmixer p\u00fcrieren, bis eine glatte Masse entsteht. Schokolade hinzuf\u00fcgen und unter h\u00e4ufigem R\u00fchren vollst\u00e4ndig schmelzen lassen.
