Hoy te compartimos c\u00f3mo preparar una pechuga de pollo jugosa, inolvidable.<\/p>\n<p>La t\u00e9cnica que usaremos para esto se llama sous vide. Es una t\u00e9cnica de cocina francesa que utiliza sellado al vac\u00edo y agua caliente a temperatura controlada para cocinar. No es una tecnolog\u00eda nueva, pero su fundamento cient\u00edfico es que se puede cocinar algo en su propio jugo haciendo circular agua caliente a su alrededor durante un largo periodo de tiempo. La carne no se seca porque est\u00e1 sellada al vac\u00edo y retiene la humedad en lugar de perderla durante la cocci\u00f3n. Para ello, necesitaremos una olla al vac\u00edo, una bomba de cocci\u00f3n al vac\u00edo o un aparato de cocci\u00f3n a presi\u00f3n con funci\u00f3n al vac\u00edo. Hoy uso una olla Instant Pot Duo con capacidad de 8 cuartos de gal\u00f3n. Tiene funci\u00f3n al vac\u00edo y veremos c\u00f3mo configurarla y cu\u00e1nto tiempo necesita para cocinar.<\/p>\n<\/div><div class=\"fusion-text fusion-text-3\"><p>En segundo lugar, necesitaremos nuestro <a href=\"https:\/\/www.chefstemp.com\/es\/producto\/termometro-para-carne-finaltouchx10\/\">ChefsTemp Toque Final X10<\/a>. Con esta configuraci\u00f3n, la carne estar\u00e1 lista para el siguiente paso: dorar la piel o despellejarla y cortarla en cubos para, por ejemplo, una ensalada de pollo. nuestro pollo dentro de las bolsas de sellado al vac\u00edo.<\/p>\n<p>Una vez que tenemos nuestra pechuga de pollo en la bolsa, nota* si enrollas hacia abajo la parte superior puedes colocar el pollo en la bolsa sin que quede jugo ni ninguno de tus condimentos en el borde sellado de la bolsa.<\/p>\n<p>Una vez que est\u00e9 sazonado, deber\u00e1 sellar la bolsa. Hay dos maneras de hacerlo, seg\u00fan el sistema de sellado que tenga. Si tiene una selladora al vac\u00edo, solo necesita sellar la bolsa. Si no, y usa bolsas con cierre herm\u00e9tico, deber\u00e1 sellarla casi por completo y luego sumergirla en una olla con agua fr\u00eda para desairear la bolsa y luego sellarla. Yo us\u00e9 una selladora al vac\u00edo.<\/p>\n<p>Una vez sellada la bolsa, estar\u00e1 listo para el siguiente paso: la cocci\u00f3n al vac\u00edo.
