Il vous faut d&#039;abord un thermom\u00e8tre de cuisine tr\u00e8s pr\u00e9cis. D\u00e9sossez la viande, assaisonnez-la et enrobez-la de farine assaisonn\u00e9e. Faites-la dorer dans un peu de beurre m\u00e9lang\u00e9 \u00e0 de l&#039;huile d&#039;olive.<\/p>\n<p>Une fois la viande bien dor\u00e9e, retirez-la de la po\u00eale, ajoutez les oignons et faites-les suer pendant environ 3 minutes. Ajoutez l&#039;ail et poursuivez la cuisson pendant 2 minutes. Ajoutez ensuite le c\u00e9leri et les carottes et laissez cuire 5 \u00e0 7 minutes. Ajoutez les pommes de terre et le bouillon. Pour un rago\u00fbt de porc, utilisez du bouillon de poulet, et pour un rago\u00fbt d&#039;agneau, du bouillon de b\u0153uf.<\/p>\n<p>Vous pouvez aussi ajouter les os dans la casserole\u00a0; cependant, il faudra les retirer une fois le rago\u00fbt cuit. Portez le bouillon et les l\u00e9gumes \u00e0 \u00e9bullition, puis remettez la viande dans la casserole et baissez le feu pour laisser mijoter doucement.
