Placez un plat en aluminium au centre du barbecue pour recueillir le jus de la dinde et \u00e9viter les flammes. Ensuite, r\u00e9partissez 1 \u00e0 1,5 kg de briquettes de charbon de bois de chaque c\u00f4t\u00e9 du plat. Vous pouvez utiliser la marque de dinde de votre choix. L&#039;important est de placer votre dinde congel\u00e9e au r\u00e9frig\u00e9rateur et de la laisser d\u00e9congeler compl\u00e8tement, ce qui prend 4 \u00e0 5 jours. Une fois votre dinde d\u00e9congel\u00e9e et pr\u00eate \u00e0 cuire, pr\u00e9parez votre barbecue et allumez le charbon de bois. Sortez la dinde de son emballage (filet et sac), rincez-la soigneusement, puis s\u00e9chez-la avec du papier absorbant. Retirez les abats et utilisez-les pour la farce et la sauce, ou jetez-les\u00a0; ne les recongelez pas. Une fois votre dinde s\u00e9ch\u00e9e, assaisonnez-la \u00e0 l&#039;int\u00e9rieur et \u00e0 l&#039;ext\u00e9rieur avec du sel, du poivre noir et les \u00e9pices de votre choix. Versez le charbon de bois allum\u00e9 sur le charbon \u00e9teint, puis placez votre dinde directement sur le plat en aluminium et fermez le couvercle. \u00c9vitez d&#039;ouvrir le couvercle du barbecue pendant la premi\u00e8re heure de cuisson\u00a0; la peau de la dinde doit dorer et croustiller pour conserver son jus. Au bout d&#039;une heure, v\u00e9rifiez le charbon et ajoutez-en si n\u00e9cessaire. N&#039;oubliez pas que la dinde doit atteindre une temp\u00e9rature interne minimale de 74 \u00b0C (165 \u00b0F) dans toutes les zones de temp\u00e9rature.
