Pour cette recette, nous r\u00e9glerons la temp\u00e9rature du fumoir \u00e0 150 degr\u00e9s. La temp\u00e9rature \u00e0 c\u0153ur du saumon doit se situer entre 115 et 125 degr\u00e9s. Le fumage sert \u00e0 le mariner et \u00e0 lui donner du go\u00fbt, pas \u00e0 le cuire. Alors, commen\u00e7ons et pr\u00e9parons notre saumon pour le fumage.<\/p>\n<p>Vous devrez d&#039;abord rassembler les ingr\u00e9dients pour la saumure s\u00e8che et la pr\u00e9parer. L&#039;une d&#039;elles consiste \u00e0 palper le filet cru afin de rep\u00e9rer les ar\u00eates qui auraient pu subsister apr\u00e8s le filetage. Elles s&#039;enl\u00e8vent facilement \u00e0 l&#039;aide d&#039;une pince \u00e0 bec fin ou d&#039;une pince \u00e0 ar\u00eates. Cette op\u00e9ration est g\u00e9n\u00e9ralement simple et on ne trouve normalement que quelques ar\u00eates, voire aucune.<\/p>\n<p>Votre saumure se compose de 2 tasses de cassonade, \u00bd tasse de sel casher, \u00bc de tasse de poivre noir et \u00bc de tasse de poudre d&#039;ail. M\u00e9langez les ingr\u00e9dients dans un bol, puis pr\u00e9parez la saumure. Versez-la dans un plat en aluminium en \u00e9talant une couche de saumure au fond. Disposez deux filets de poisson par-dessus, recouvrez-les de saumure, puis r\u00e9p\u00e9tez l&#039;op\u00e9ration avec deux autres filets. Continuez ainsi jusqu&#039;\u00e0 ce que le plat soit plein ou que tous vos filets soient dans la saumure. sortirez vos filets, vous constaterez la pr\u00e9sence d&#039;une quantit\u00e9 importante de liquide dans la po\u00eale. Il faut le fumer \u00e0 froid, le manipuler avec pr\u00e9caution car il est fragile et il est pr\u00e9f\u00e9rable de le laisser refroidir avant de le servir.<\/p>\n<p>Le fumage permet d&#039;obtenir un saumon tr\u00e8s savoureux, \u00e0 la texture et \u00e0 la fermet\u00e9 exceptionnelles. Fumer le filet avec la peau prot\u00e8ge la chair et la maintient moelleuse. Il est important de ne pas \u00e9liminer toute l&#039;humidit\u00e9, car le processus consiste \u00e0 saler le poisson. Pendant le fumage, les r\u00e9sidus d&#039;huile et d&#039;eau se d\u00e9posent \u00e0 la surface du poisson sous forme d&#039;un film gris\u00e2tre, facile \u00e0 enlever une fois le saumon sorti du fumoir. Une heure apr\u00e8s avoir plac\u00e9 le saumon dans le fumoir, badigeonnez-le d&#039;une sauce ou d&#039;un gla\u00e7age.
