C&#039;est un steak incroyablement savoureux et tendre\u00a0; si vous en trouvez, n&#039;h\u00e9sitez pas \u00e0 en acheter. On peut le faire cuire \u00e0 la po\u00eale, mais je pr\u00e9f\u00e8re le griller\u00a0: sa saveur est incomparable et c&#039;est la partie la plus tendre de la c\u00f4te de b\u0153uf, juste apr\u00e8s le filet mignon.<\/p>\n<p>Une fois le chapeau s\u00e9par\u00e9 de la c\u00f4te de b\u0153uf, il vous faudra retirer le gras et la membrane (tissu conjonctif). M\u00eame si cela peut para\u00eetre compliqu\u00e9, c&#039;est une technique facile \u00e0 apprendre. Comment retirer la membrane\u00a0? Glissez d&#039;abord la lame de votre couteau bien aiguis\u00e9 sous la membrane, en l&#039;inclinant l\u00e9g\u00e8rement vers le haut, puis faites glisser le couteau vers l&#039;ext\u00e9rieur. La membrane se d\u00e9tachera ainsi de la viande. Une fois tout le tissu conjonctif retir\u00e9 (n&#039;en laissez pas une miette, car cela rendrait la viande dure), retirez le plus de gras possible. La technique est \u00e9galement simple\u00a0: raclez le gras avec votre couteau en maintenant la lame bien droite, sans couper la viande. Racler dans le sens des fibres permettra au gras de se d\u00e9tacher facilement.<\/p>\n<p>Une fois le chapeau de la viande par\u00e9, assaisonnez l&#039;int\u00e9rieur avec du sel et du poivre, puis roulez-le en forme de boudin dans le sens des fibres ou dans le sens de la longueur. Une fois roul\u00e9, ficelez-le \u00e0 2,5 cm de l&#039;extr\u00e9mit\u00e9 la plus large avec de la ficelle de boucher, puis faites des n\u0153uds tous les 5 \u00e0 7,5 cm. Assaisonnez ensuite l&#039;ext\u00e9rieur du steak avec du sel et du poivre, puis coupez-le en steaks de 5 cm d&#039;\u00e9paisseur et assaisonnez les Placez les steaks sur la grille, au-dessus de la source de chaleur indirecte, et commencez la cuisson.
