plat traditionnel anglais mijot\u00e9 au four, n\u00e9cessitant 5 \u00e0 6 heures de cuisson et de nombreuses \u00e9tapes. Cette version simplifi\u00e9e permet d&#039;obtenir un brisket tendre et savoureux en quelques \u00e9tapes seulement. La cuisson plus longue et \u00e0 basse temp\u00e9rature au fumoir favorise la d\u00e9composition des fibres musculaires, pour un r\u00e9sultat fondant en bouche qui fera des envieux pendant des ann\u00e9es.<\/p>\n<p>Le fumage des viandes est l&#039;une des plus anciennes m\u00e9thodes de cuisson connues de l&#039;homme. La d\u00e9couverte du feu a ouvert la voie \u00e0 une plus grande vari\u00e9t\u00e9 d&#039;aliments, car il \u00e9tait d\u00e9sormais possible de cuire tout ce que l&#039;on mangeait. On a d&#039;abord pratiqu\u00e9 la cuisson \u00e0 la broche et la cuisson \u00e0 la cendre, mais l&#039;inconv\u00e9nient \u00e9tait qu&#039;il fallait surveiller constamment la cuisson et retourner r\u00e9guli\u00e8rement les aliments, sinon un c\u00f4t\u00e9 \u00e9tait br\u00fbl\u00e9 et l&#039;autre cru. La premi\u00e8re avanc\u00e9e fut le fumoir \u00e0 vapeur. Il s&#039;agit d&#039;un trou creus\u00e9 dans le sol et tapiss\u00e9 de pierres. On y allume un feu que l&#039;on laisse se consumer jusqu&#039;\u00e0 l&#039;obtention de braises. On recouvre ensuite les braises d&#039;une \u00e9paisse couche d&#039;herbe verte, on place les aliments \u00e0 cuire sur l&#039;herbe, puis on les recouvre d&#039;une autre couche d&#039;herbe. Enfin, le fumoir est recouvert de terre pour conserver la chaleur. C&#039;est une m\u00e9thode de cuisson efficace, mais elle ne permet pas d&#039;obtenir une belle caram\u00e9lisation de la viande.<\/p>\n<p>Vint ensuite le fumage de la viande. Cette m\u00e9thode de cuisson indirecte permet un temps de cuisson plus long\u00a0: les aliments sont chauff\u00e9s et aromatis\u00e9s par la fum\u00e9e, sans \u00eatre expos\u00e9s directement au feu. Le fumage est ainsi devenu la m\u00e9thode de cuisson et de conservation de la viande la plus courante pendant des mill\u00e9naires.<\/p>\n<p>Avec l&#039;av\u00e8nement du travail des m\u00e9taux, l&#039;humanit\u00e9 a pu d\u00e9velopper de nouvelles m\u00e9thodes de cuisson sans avoir recours au fumage. Cependant, pour conserver les viandes, le fumage restait indispensable. Ce n&#039;est qu&#039;avec l&#039;invention des fours \u00e0 temp\u00e9rature contr\u00f4l\u00e9e, de la r\u00e9frig\u00e9ration et de la cong\u00e9lation que le fumage, autrefois pratique courante chez presque tous les bouchers, est devenu un secteur de niche. Il faut alors red\u00e9couvrir des techniques oubli\u00e9es avec les progr\u00e8s technologiques. Aujourd&#039;hui, on trouve des fumoirs \u00e9lectriques, \u00e0 propane, \u00e0 charbon, \u00e0 bois, \u00e0 granul\u00e9s, etc. Tous cherchent \u00e0 r\u00e9inventer l&#039;art du fumage. Ficelez-la ensuite avec de la ficelle de boucher, en r\u00e9p\u00e9tant l&#039;op\u00e9ration \u00e0 intervalles r\u00e9guliers sur toute sa longueur, en 4 ou 5 points. Une fois le r\u00f4ti ficel\u00e9, assaisonnez-le \u00e0 l&#039;ext\u00e9rieur avec votre m\u00e9lange d&#039;\u00e9pices pr\u00e9f\u00e9r\u00e9\u00a0: sel assaisonn\u00e9, \u00e9pices barbecue ou
