Ce n&#039;est pas une technologie nouvelle, mais son principe repose sur la cuisson dans le jus, gr\u00e2ce \u00e0 la circulation d&#039;eau chaude autour des aliments pendant une longue p\u00e9riode. La viande ne se dess\u00e8che pas car, mise sous vide, elle conserve son humidit\u00e9. Il y a deux fa\u00e7ons de proc\u00e9der, selon le type de syst\u00e8me de fermeture dont vous disposez. Si vous avez une machine sous vide, il suffit de sceller le sac. Sinon, si vous utilisez des sacs \u00e0 fermeture zip, il faut le fermer presque enti\u00e8rement, puis le plonger dans un r\u00e9cipient d&#039;eau froide pour chasser l&#039;air, avant de le sceller. J&#039;ai utilis\u00e9 une machine sous vide.<\/p>\n<p>Une fois votre sachet scell\u00e9, vous pouvez passer \u00e0 l&#039;\u00e9tape suivante\u00a0: la cuisson sous vide. poulet<\/strong><\/span><\/p>\n<p>Cette \u00e9tape est tout aussi importante que les pr\u00e9c\u00e9dentes. C&#039;est ici que vous prendrez votre blanc de poulet cuit sous vide (avec os et peau) et le pr\u00e9parerez pour la pr\u00e9sentation. Si vous le serviez tel quel, on pourrait croire qu&#039;il n&#039;est pas encore cuit\u00a0; il faut donc le pr\u00e9senter de fa\u00e7on soign\u00e9e.<\/p>\n<p>Tout d&#039;abord, il faut pr\u00e9chauffer le barbecue. J&#039;ai utilis\u00e9 un barbecue \u00e0 gaz\u00a0: je l&#039;ai allum\u00e9 et j&#039;ai mis les deux br\u00fbleurs \u00e0 pleine puissance pour le pr\u00e9chauffer. Si vous utilisez un barbecue au charbon, pr\u00e9parez une demi-chemin\u00e9e d&#039;allumage et laissez les braises se consumer. Lorsqu&#039;elles deviennent grises, elles sont pr\u00eates\u00a0; versez-les alors dans le barbecue et fermez le couvercle pour le pr\u00e9chauffer.<\/p>\n<p><strong><b>\u00a0<\/b><\/strong>Une fois votre gril allum\u00e9, fermez le couvercle et laissez-le atteindre au moins 400 \u00b0F avant de placer votre poulet sur le gril.<\/p>\n<p>Ouvrez le couvercle et assurez-vous que votre barbecue est propre et pr\u00eat \u00e0 l&#039;emploi. La peau doit \u00eatre bien dor\u00e9e. Il faut \u00e9galement laisser le gril remonter en temp\u00e9rature.<\/p>\n<p>Laissez cuire le poulet pendant au moins 5 minutes \u00e0 cette temp\u00e9rature avant d&#039;ouvrir le couvercle du gril et de v\u00e9rifier la cuisson. Passez votre pouce le long de l&#039;extr\u00e9mit\u00e9 la plus \u00e9paisse pour le sentir. S&#039;il est pr\u00e9sent, vous le sentirez et pourrez l&#039;enlever facilement. Sinon, passez votre pouce le long du br\u00e9chet et s\u00e9parez-le de la chair. Vous pourrez ainsi retirer tous les os du br\u00e9chet en une seule pi\u00e8ce, en conservant la chair et la peau intactes. Une fois cette \u00e9tape termin\u00e9e, passez \u00e0 la suivante.<\/p>\n<p>Si vous voyez du rose dans la viande, ne vous inqui\u00e9tez pas, la viande est cuite, c&#039;est g\u00e9n\u00e9ralement pr\u00e9sent chez les jeunes volailles et la viande est parfaitement comestible.<\/p>\n<p>Une fois le br\u00e9chet retir\u00e9, placez le blanc de poulet sur une planche \u00e0 d\u00e9couper, peau
