Le but principal de la bi\u00e8re est, en th\u00e9orie, d&#039;impr\u00e9gner la volaille de saveur et de moelleux, pour obtenir un poulet juteux et d\u00e9licieusement parfum\u00e9 \u00e0 la bi\u00e8re.<\/p>\n<p>Malheureusement, cette th\u00e9orie est erron\u00e9e. Puisque la canette de bi\u00e8re n&#039;est pas expos\u00e9e directement \u00e0 la chaleur et est isol\u00e9e thermiquement par le poulet, le liquide ne pourra jamais bouillir. La temp\u00e9rature maximale que j&#039;ai pu atteindre lors de mes essais de cuisson \u00e9tait de 80 \u00b0C (176 \u00b0F), soit un l\u00e9ger fr\u00e9missement, loin de l&#039;\u00e9bullition. La canette sert simplement de support et de l\u00e8chefrite pour recueillir le jus de cuisson du poulet. Cela ne signifie pas pour autant qu&#039;il n&#039;y a pas de possibilit\u00e9 de transmission des saveurs, mais il est essentiel de choisir des ar\u00f4mes puissants qui s&#039;activeront \u00e0 basse temp\u00e9rature. Ces ar\u00f4mes intenses se diffuseront \u00e0 l&#039;int\u00e9rieur du poulet et lui conf\u00e9reront un d\u00e9licieux parfum.<\/p>\n<p>Un autre inconv\u00e9nient est que cette m\u00e9thode ne permet pas d&#039;obtenir la m\u00eame peau croustillante qu&#039;un poulet r\u00f4ti ou d\u00e9soss\u00e9 normalement., <a href=\"https:\/\/www.chefstemp.com\/fr\/poulet-roti-entier-parfaitement-juteux\/\"><u>comme celui-ci<\/u><\/a>.
