D&#039;un c\u00f4t\u00e9, le joyau de la boucherie\u00a0: le filet mignon\u00a0; de l&#039;autre, le puissant et robuste faux-filet, exceptionnellement persill\u00e9 et savoureux. Comment un cuisinier parvient-il \u00e0 cuire simultan\u00e9ment ces deux morceaux, aux structures musculaires si diff\u00e9rentes, \u00e0 la temp\u00e9rature id\u00e9ale\u00a0?<\/p>\n<p>Le premier probl\u00e8me \u00e0 r\u00e9soudre, et qui explique en grande partie la saveur exquise de cette pi\u00e8ce de viande, est l&#039;os. Cet os central en forme de T, une vert\u00e8bre lombaire du faux-filet, occupe un volume important et cr\u00e9e une r\u00e9partition in\u00e9gale de la chaleur \u00e0 la cuisson. Les id\u00e9es re\u00e7ues selon lesquelles \u201c\u00a0cuire \u00e0 feu vif permet de conserver le jus\u00a0\u201d et \u201c\u00a0cuire \u00e0 feu vif puis laisser mijoter\u00a0\u201d se sont r\u00e9v\u00e9l\u00e9es fausses. Saisir \u00e0 feu vif ne permet pas de conserver le jus, et une cuisson \u00e0 feu vif suivie d&#039;une cuisson \u00e0 feu doux produit une \u00e9paisse couche de viande trop cuite avant d&#039;atteindre la cuisson d\u00e9sir\u00e9e.<\/p>\n<p>La technique de la cuisson invers\u00e9e est plus douce\u00a0: on utilise une chaleur douce pour amener lentement la viande \u00e0 la temp\u00e9rature souhait\u00e9e avant de la saisir \u00e0 feu vif pour obtenir la cro\u00fbte fonc\u00e9e et savoureuse tant recherch\u00e9e. Cela permet un meilleur contr\u00f4le et d&#039;obtenir une cuisson quasi parfaite et uniforme, d&#039;un bord \u00e0 l&#039;autre. Le T-bone est d\u00e9coup\u00e9 dans la partie la plus proche du centre de la vache et ne contient donc pas les m\u00eames proportions de filet et de faux-filet que le porterhouse. La r\u00e9glementation du D\u00e9partement de l&#039;Agriculture des \u00c9tats-Unis (USDA) stipule que le filet d&#039;un porterhouse doit mesurer au moins 3,2 cm (1,25 pouce) de large \u00e0 son point le plus large. Le T-bone mesure entre 1,3 et 3,2 cm (\u00bd \u00e0 1 \u00bc pouce) de large\u00a0; en dessous, il s&#039;agit d&#039;un faux-filet avec os.<\/p>\n<p>Nous privil\u00e9gions une pi\u00e8ce de viande \u00e9paisse d&#039;environ 6 cm, suffisante pour 6 personnes. Placez votre steak sur une grille pos\u00e9e sur une plaque \u00e0 p\u00e2tisserie \u00e0 rebords et assaisonnez-le g\u00e9n\u00e9reusement de sel casher. Laissez-le reposer \u00e0 d\u00e9couvert au r\u00e9frig\u00e9rateur toute la nuit afin d&#039;\u00e9liminer l&#039;humidit\u00e9 de la surface et de commencer \u00e0 s\u00e9cher l&#039;ext\u00e9rieur. Cela permettra d&#039;obtenir la cro\u00fbte bien dor\u00e9e que l&#039;on recherche.
