Il est donc essentiel d&#039;assaisonner g\u00e9n\u00e9reusement toute la surface disponible, car une fois la viande effiloch\u00e9e, la couche d&#039;assaisonnement est tr\u00e8s fine et r\u00e9partie sur un grand volume.<\/p>\n<p>Nous privil\u00e9gions un double enrobage d&#039;assaisonnement et un repos d&#039;une nuit. Cette m\u00e9thode permet aux \u00e9pices d&#039;absorber un peu de liquide \u00e0 la surface de la viande, cr\u00e9ant ainsi une sorte de marinade. La m\u00e9lasse apporte plus de saveur et d&#039;humidit\u00e9, tout en favorisant la caram\u00e9lisation du sucre \u00e0 basse temp\u00e9rature sur le barbecue, ce qui contribue \u00e0 la formation d&#039;une belle cro\u00fbte.<\/p>\n<p>Notre m\u00e9lange d&#039;\u00e9pices pr\u00e9f\u00e9r\u00e9 est simple\u00a0: paprika, piment en poudre, poivre noir, ail granul\u00e9, cumin et oignon en poudre.
