Cependant, si vous comprenez la structure d&#039;une c\u00f4te de porc du centre, vous pouvez la griller avec succ\u00e8s et servir une c\u00f4te tendre, juteuse et savoureuse qui ravira vos convives.<\/p>\n<p>Nous avons ici une c\u00f4telette de longe avec os. \u00c0 premi\u00e8re vue, elle ressemble \u00e0 un T-bone ou \u00e0 un porterhouse. Elle provient de la m\u00eame partie de la carcasse de porc que de celle de b\u0153uf. La diff\u00e9rence r\u00e9side dans l&#039;absence de gras intramusculaire. Chez le b\u0153uf, ce gras est d\u00fb \u00e0 une moindre sollicitation du muscle, ce qui favorise le persillage et la tendret\u00e9 de la viande. Ce n&#039;est pas le cas chez le porc. La c\u00f4telette doit atteindre une temp\u00e9rature interne d&#039;environ 38 \u00b0C (100 \u00b0F). Poursuivez la cuisson jusqu&#039;\u00e0 ce que sa temp\u00e9rature interne atteigne 66 \u00b0C (150 \u00b0F). Retirez-la ensuite du gril et laissez-la reposer 5 minutes pour qu&#039;elle atteigne sa temp\u00e9rature interne finale de 68 \u00b0C (155 \u00b0F).<\/p>\n<p>Une fois votre c\u00f4telette dans la po\u00eale et couverte, baissez le feu du gril et refermez-le. Laissez cuire la c\u00f4telette pendant 20 \u00e0 30 minutes, jusqu&#039;\u00e0 ce qu&#039;elle atteigne la temp\u00e9rature souhait\u00e9e. Quelques \u00e9tapes suppl\u00e9mentaires sont donc n\u00e9cessaires, mais elles en valent vraiment la peine. L&#039;une d&#039;elles consiste \u00e0 ajouter un liquide de cuisson. Vous pouvez utiliser diff\u00e9rents liquides\u00a0: jus de pomme, jus d&#039;ananas, soda au gingembre, Seven Up, bouillon de poulet\u2026 Chacun d&#039;eux donnera un r\u00e9sultat satisfaisant. J&#039;ai choisi le soda au gingembre pour sa saveur et sa douceur. Retirez ensuite les c\u00f4telettes du gril, couvrez-les et laissez-les reposer au moins 5 minutes. La cuisson r\u00e9siduelle permettra d&#039;atteindre la temp\u00e9rature cible de 68 \u00b0C (155 \u00b0F) en quelques minutes seulement, pour un r\u00e9sultat des plus savoureux.<\/p>\n<p>J&#039;ai volontairement utilis\u00e9 du soda au gingembre, mais vous pouvez aussi utiliser de la bi\u00e8re de gingembre, de la bi\u00e8re classique, de la bi\u00e8re brune, du vin blanc, du bouillon de poulet, du jus d&#039;ananas, du jus de pomme ou tout autre liquide neutre pour braiser la c\u00f4telette. L&#039;importance du liquide de braisage r\u00e9side dans le fait qu&#039;il attendrit la viande pendant la cuisson, ce qui est notre objectif. Nous voulons des morceaux de viande savoureux, tendres, juteux et parfum\u00e9s. Ces deux accompagnements sont faciles \u00e0 pr\u00e9parer et ne n\u00e9cessitent que peu de pr\u00e9paration \u00e0 l&#039;avance.
