Se le polpette sono pi\u00f9 grandi, potete avvolgerle completamente con un&#039;altra fetta di pancetta. Una volta fatto questo, cospargete la pancetta con le spezie per barbecue, adagiatela su una griglia e trasferitela in un affumicatore preriscaldato a 121 \u00b0C (250 \u00b0F). Affumicate le polpette per circa 45 minuti, o fino a quando la temperatura interna non raggiunge i 57 \u00b0C (135 \u00b0F).<\/p>\n<p>Spennellate le polpette con la salsa che preferite, facendo attenzione a non riutilizzare la stessa salsa come condimento a parte, per evitare contaminazioni. Infornatele nel forno preriscaldato a 204\u00b0C (400\u00b0F). Lasciatele cuocere per 6-9 minuti, o fino a quando non raggiungono una temperatura interna di 71\u00b0C (160\u00b0F). Oggi sul mercato non mancano le opzioni di sidro di alta qualit\u00e0; per un sapore e una consistenza migliori, optate per la variet\u00e0 non filtrata piuttosto che per quella trasparente imbottigliata in serie.<\/p>\n<p>Quando si prepara il sidro caldo speziato, \u00e8 importante non surriscaldarlo, altrimenti un buon sidro pu\u00f2 essere rovinato da un&#039;ebollizione troppo vigorosa. Questo non solo intorbidisce il sidro finale, ma pu\u00f2 anche distruggere i delicati aromi delle spezie, creando un sapore sgradevole. Un altro consiglio \u00e8 quello di utilizzare solo spezie e frutta intere; questo vi far\u00e0 risparmiare tempo in seguito, evitando che le spezie in polvere si stacchino dalla bevanda. Le nostre spezie preferite si abbinano perfettamente alle mele: bastoncini di cannella, chiodi di garofano, pimento, anice stellato e qualche fetta d&#039;arancia.<\/p>\n<p>Innanzitutto, tostate le spezie in una pentola asciutta. Quando la stanza inizia a profumare d&#039;autunno, aggiungete il sidro, le spezie e la scorza d&#039;arancia. Portate il tutto a 76-79 \u00b0C e cuocete per almeno 30 minuti. In alternativa, potete usare una pentola a cottura lenta a bassa temperatura per circa 4 ore.
