Pu\u00f2 essere cotta in padella, ma io preferisco grigliarla: il sapore \u00e8 inconfondibile e la bistecca \u00e8 la parte migliore e pi\u00f9 tenera della costata di manzo, seconda solo al filetto.<\/p>\n<p>Una volta separata la calotta dalla costata, sar\u00e0 necessario rimuovere il grasso e la pellicina (tessuto connettivo). Anche se pu\u00f2 sembrare complicato, \u00e8 una tecnica facile da imparare. Come rimuovere la pellicina? Per prima cosa, fai scorrere il coltello affilato sotto la pellicina e ruota il taglio leggermente verso l&#039;alto, in direzione della pellicina, allontanandoti da te. Il coltello separer\u00e0 la pellicina dalla carne. Una volta rimosso tutto il tessuto connettivo, non lasciarne alcuno sulla carne, altrimenti si creeranno delle zone ostinate. Rimuovi tutto il grasso possibile. Anche la tecnica per rimuovere il grasso \u00e8 semplice: raschia via il grasso con il coltello, mantenendo il bordo dritto verso l&#039;alto e verso il basso, senza tagliare la carne, ma piuttosto con un movimento di raschiatura nel senso delle fibre e il grasso verr\u00e0 via subito.<\/p>\n<p>Una volta rifilata la testa, condisci l&#039;interno della bistecca con sale e pepe e arrotolala per formare un rotolo seguendo le fibre o nel senso della lunghezza. Una volta arrotolata, legala con spago da macellaio a un pollice dall&#039;estremit\u00e0 pi\u00f9 grande, quindi annoda ogni 5-7 cm. Una volta legata la testa, condisci l&#039;esterno della bistecca con sale e pepe, tagliala a fette spesse 5 cm e condisci anche le estremit\u00e0.<\/p>\n<\/div><\/div><\/div><div
