prima l&#039;ananas a pezzi con il suo succo e frullate fino a ottenere una purea, poi aggiungete la gelatina di mango e peperoncino e frullate di nuovo, quindi i peperoncini habanero e frullate di nuovo. Versate il contenuto del frullatore in una casseruola e aggiungete il succo d&#039;ananas. Mettete sul fornello a fuoco medio e portate a ebollizione, riducete la fiamma al minimo, coprite la casseruola e cuocete per circa trenta minuti. Una volta cotta, togliete dal fuoco e filtrate la salsa di costine. Filtrando la salsa, eliminerete eventuali pezzi pi\u00f9 grandi rimasti e i semi di peperoncino che creano il calore intenso dei peperoncini habanero. Ricordate inoltre che il calore \u00e8 causato dal peperone ed \u00e8 maggiormente concentrato nei semi e nelle costole all&#039;interno dei peperoncini.<\/p>\n<p>Dopo aver filtrato la salsa delle costine, rimettila nella pentola, aggiungi lo zucchero, rimettila sul fuoco e porta a ebollizione, quindi fai sobbollire, copri e cuoci per 30 minuti o finch\u00e9 non si riduce di un terzo.<\/p>\n<p>Una volta cotta la salsa per le costine, lasciatela raffreddare e mettetela in un contenitore a vostra scelta, quindi riponetela in frigorifero. Dopo 4 ore di cottura, irroratele con la salsa e lasciatele cuocere per un&#039;altra ora.
