Il nostro obiettivo oggi \u00e8 condividere con voi come preparare il petto di pollo pi\u00f9 succoso e indimenticabile.<\/p>\n<p>La tecnica che useremo per farlo si chiama Sous Vide. \u00c8 una tecnica di cottura francese che utilizza il sottovuoto e l&#039;acqua calda a temperatura controllata per cuocere gli alimenti. Non \u00e8 una tecnologia nuova, ma la scienza alla base di questa tecnica \u00e8 che \u00e8 possibile cuocere un alimento nei suoi stessi succhi facendo circolare acqua calda per un lungo periodo di tempo. La carne non si secca perch\u00e9 \u00e8 sigillata sottovuoto ed \u00e8 in grado di trattenere l&#039;umidit\u00e0 anzich\u00e9 perderla durante la cottura. Ora potreste chiedervi se sia l&#039;unica impostazione da usare, e la risposta \u00e8 no. Ci sono due modi per farlo, a seconda del tipo di sistema di sigillatura che hai. Se hai una macchina per il sottovuoto, tutto ci\u00f2 che devi fare \u00e8 sigillare il sacchetto. In caso contrario, e stai usando sacchetti con chiusura a zip, dovrai sigillarlo quasi completamente, quindi immergerlo in una pentola di acqua fredda per eliminare l&#039;aria dal sacchetto e infine sigillarlo. Io ho usato una macchina per il sottovuoto.<\/p>\n<p>Una volta sigillato il sacchetto, sei pronto per la fase successiva: la cottura sottovuoto.
