Posiziona l&#039;accessorio vortice al centro della griglia inferiore del barbecue, inserendo al suo interno un&#039;ulteriore dozzina di bricchette di carbone. Posizionando il pollo attorno al vortice, potrai affumicarlo gradualmente tramite calore indiretto. Se non utilizzi un vortice, posiziona semplicemente i carboni spenti su un lato della griglia inferiore. Per facilitare la pulizia, puoi rivestire il lato della griglia dove non ci sono carboni con un foglio di alluminio, creando anche uno scudo termico, oppure posizionare una teglia monouso in alluminio con 2,5 cm di acqua, birra, succo di mela, aceto di mele o il tuo succo preferito, sul lato lontano dai carboni. Consiglio: in un piccolo sacchetto di plastica, mettete 2-3 fogli di carta assorbente e cospargeteli con olio d&#039;oliva o vegetale. Chiudete il sacchetto, piegatelo per far s\u00ec che l&#039;olio copra parzialmente i fogli di carta. Posizionate i fogli unti sotto la ciminiera o sopra le braci per accendere il fuoco: bruceranno pi\u00f9 lentamente man mano che l&#039;olio si consuma, permettendo alla carbonella di accendersi e bruciare. Una volta che la carbonella nella ciminiera si \u00e8 ridotta a braci rosse, versate il contenuto sulla carbonella spenta nel vortice. Se non utilizzate un accessorio per vortice, versate la carbonella calda sulla carbonella spenta su un lato della griglia o dell&#039;affumicatore, assicurandovi che ci sia abbastanza spazio sulle griglie per posizionare i pezzi di pollo in modo che non siano direttamente sopra le braci accese. Quando si usa un bollitore Weber, \u00e8 importante posizionare il coperchio sulla griglia con la presa d&#039;aria sopra il pollo. Questo attira il fumo e il calore attraverso la carne, consentendo una cottura pi\u00f9 lenta che induce una maggiore penetrazione del sapore affumicato nel pollo. Una cottura pi\u00f9 lenta consente inoltre all&#039;amido di mais di asciugare la pelle, creando quella tanto desiderata pelle croccante. Segui le raccomandazioni del produttore del tuo barbecue o affumicatore su come utilizzare i deflettori di aspirazione e scarico per mantenere temperature costanti. Per il bollitore Weber, lascio entrambi i deflettori inferiore e superiore aperti di \u00bc, il che mantiene un intervallo di temperatura costante di 225-250 \u00b0C. Invece di usare un vortice, \u00e8 sufficiente posizionare il letto di carbone su un lato della griglia e una vaschetta con 2,5 cm di acqua sull&#039;altro lato. Questo consentir\u00e0 la cottura indiretta e la penetrazione del fumo nel pollo. La vaschetta dell&#039;acqua pu\u00f2 essere riempita con acqua, succo di mela, aceto di mele o qualsiasi liquido a scelta. Il suo scopo \u00e8 raffreddare il lato dell&#039;affumicatore dove verr\u00e0 posizionato il pollo sulle griglie e aggiungere umidit\u00e0 per evitare che il cibo si secchi. Tuttavia, poich\u00e9 l&#039;obiettivo \u00e8 una pelle croccante, riempire la vaschetta dell&#039;acqua solo con liquido sufficiente a mantenere bassa la temperatura per una cottura pi\u00f9 lenta.<\/p>\n<\/div><\/div><\/div><div class=\"fusion-layout-column fusion_builder_column fusion-builder-column-10 fusion_builder_column_1_1 1_1 fusion-flex-column\" style=\"--awb-bg-size:cover;--awb-width-large:100%;--awb-margin-top-large:0px;--awb-spacing-right-large:1.92%;--awb-margin-bottom-large:20px;--awb-spacing-left-large:1.92%;--awb-width-medium:100%;--awb-order-medium:0;--awb-spacing-right-medium:1.92%;--awb-spacing-left-medium:1.92%;--awb-width-small:100%;--awb-order-small:0;--awb-spacing-right-small:1.92%;--awb-spacing-left-small:1.92%;\"><div class=\"fusion-column-wrapper fusion-column-has-shadow fusion-flex-justify-content-flex-start fusion-content-layout-column\"><div class=\"fusion-text fusion-text-10\"><p>Posiziona 1-2 pezzi del legno desiderato (io ho usato il noce americano) sopra il letto di carboni ardenti per creare un aroma di affumicatura qualche minuto prima di mettere il pollo sulla griglia. Io metto il mio pezzo sulla griglia superiore per consentire una combustione pi\u00f9 lenta e creare il massimo aroma di affumicatura. Questo permette al legno di iniziare a bruciare e creare l&#039;affumicatura desiderata. Il fumo migliore \u00e8 di colore bluastro o trasparente. Questo indica un fuoco che brucia pulito. Un fumo bianco indica che il fuoco \u00e8 privo di ossigeno e che \u00e8 necessario aprire i deflettori per far entrare pi\u00f9 aria nel braciere finch\u00e9 il colore non cambia. Il fumo invisibile \u00e8 l&#039;ideale. Quindi piega le due parti per esporre l&#039;articolazione e separa i pezzi tagliandola. Sciacqua sotto l&#039;acqua fredda per assicurarti di aver rimosso eventuali piccoli frammenti di osso, quindi asciuga con carta assorbente. Consiglio: conserva le punte delle ali per farle bollire in acqua per creare brodo o sughi. Io le metto in sacchetti sottovuoto finch\u00e9 non ne ho abbastanza per preparare il brodo.
