Uit onderzoek is gebleken dat het verhitten van gevogelte tot 63\u00b0C (145\u00b0F) gedurende 8 minuten ook de bacteri\u00ebn (waaronder salmonella, een veelvoorkomend probleem bij gevogelte) doodt en voorkomt dat het gevogelte uitdroogt.
