Voor deze kooktechniek gebruik ik het liefst een diepvrieskalkoen. Diepvrieskalkoenen hoeven niet gepekeld te worden. Invriezen en vervolgens in de koelkast ontdooien duurt 5 dagen en maakt de kalkoen vanzelf malser. Zodra de kalkoen volledig ontdooid is, gaan we verder met het voorbereiden van de grill.<\/p>\n<p>Voor een kalkoen van 5,5 kilo heb je 3,5 tot 5 kilo houtskoolbriketten nodig. Gebruik hiervoor geen snelontstekende houtskoolbriketten; de aanmaakvloeistof waarmee ze zijn doordrenkt, geeft een nare nasmaak. correct opzetten van de grill, de rest is eenvoudig. Plaats een aluminium bak in het midden van de grill om eventueel kalkoensap op te vangen en te voorkomen dat er vlammen ontstaan. Leg vervolgens 1 tot 1,5 kilo houtskoolbriketten aan weerszijden van de bak. Gebruik daarna een houtskoolstarter om 2 kilo houtskoolbriketten aan te steken; het duurt 20 tot 30 minuten voordat ze klaar zijn.<\/p>\n<p>Zodra de houtskool klaar is, verdeel je de helft over elke stapel briketten, leg je de gekruide kalkoen op de grill en sluit je het deksel. Afhankelijk van het gewicht is de kalkoen na 2 tot 4 uur gaar. Je hoeft de eerste twee uur geen houtskool toe te voegen. Je kunt elk merk kalkoen gebruiken dat je wilt. Het belangrijkste is om de bevroren kalkoen in de koelkast te leggen en volledig te laten ontdooien, wat 4-5 dagen duurt. Zodra de kalkoen ontdooid is en je klaar bent om te koken, zet je de grill klaar en steek je de houtskool aan. Haal de kalkoen uit het net en de zak waarin hij zit, spoel hem grondig af en dep hem droog met keukenpapier. Verwijder de ingewanden en gebruik ze voor vulling en jus of gooi ze weg; vries ze niet opnieuw in. Zodra de kalkoen drooggedept is, kruid je hem van binnen en van buiten met zout, zwarte peper en eventuele andere kruiden naar keuze. Giet de brandende houtskool op de nog niet ontstoken houtskool en leg de kalkoen direct op de aluminium bakplaat en sluit het deksel. Weersta de verleiding om het deksel van de grill tijdens het eerste uur van het koken te openen; de kalkoen heeft een mooie bruine en knapperige huid nodig om de sappen vast te houden. Controleer na het eerste uur de houtskool en voeg indien nodig meer toe. Onthoud dat de kalkoen in alle temperatuurzones een minimale temperatuur van 74 \u00b0C moet bereiken. Dit betekent dat de dij en de poot tegen de tijd dat de kalkoenborst gaar is, bijna 93 \u00b0C zullen zijn.
