Het is een ongelooflijk smaakvolle en malse steak die je zeker moet proberen als je hem kunt vinden. Je kunt hem in de pan bakken, maar ik gril hem liever. De smaak is onmiskenbaar en de cap steak is het beste en meest malse deel van de prime rib, qua malsheid alleen overtroffen door de filet mignon.<\/p>\n<p>Nadat je de cap van de rib hebt gescheiden, moet je het vet en het vlies (bindweefsel) verwijderen. Hoewel dat misschien intimiderend klinkt, is het een eenvoudige techniek om te leren. Hoe verwijder je het vlies? Schuif eerst je scherpe mes onder het vlies en draai het mes in een licht opwaartse hoek richting het vlies. Beweeg de snijkant van je af en het mes zal het vlies van het vlees scheiden. Zodra je al het bindweefsel hebt verwijderd (laat niets aan het vlees zitten, want dat zorgt voor taaie plekken), verwijder je zoveel mogelijk vet. De techniek voor het verwijderen van het vet is ook eenvoudig: schraap het vet eraf met je mes, houd de snijkant recht omhoog en omlaag en snijd niet in het vlees, maar schraap met de vezels mee. Het vet zal er dan zo afkomen.<\/p>\n<p>Nadat je de bovenkant hebt afgesneden, breng je de binnenkant van de biefstuk op smaak met zout en peper en rol je hem op tot een rol, in de lengterichting. Bind de rol vervolgens vast met slagerstouw op ongeveer 2,5 cm van het dikste uiteinde en knoop om de 5-7 cm een knoop. Breng de buitenkant van de biefstuk op smaak met zout en peper, snijd hem in plakken van ongeveer 5 cm dik en breng ook de uiteinden op smaak.<\/p>\n<\/div><\/div><\/div><div Als je een houtskoolgrill gebruikt, plaats dan de houtskool aan \u00e9\u00e9n uiteinde van de grill. Als je een gasgrill gebruikt om je biefstuk te bereiden, zet dan, afhankelijk van de branderconfiguratie, de buitenste brander aan. Bij een model met drie branders zet je de buitenste branders aan en laat je de middelste brander uit. Leg de biefstukken op de grill boven de indirecte warmtebron en begin met het bakken.
