Een perfect gerookte varkensschouder is mals en sappig en kan worden verwerkt tot pulled pork voor sandwiches, in plakjes gesneden en geserveerd als braadstuk, of in stukjes gesneden en gebruikt als ingredi\u00ebnt in diverse gerechten. Je hoeft niet al het vet te verwijderen; een kwart inch (ongeveer 6 mm) vetlaag is optimaal en zorgt ervoor dat het vlees sappig blijft tijdens het roken.<\/p>\n<\/div><div class=\"fusion-text fusion-text-3\" style=\"--awb-text-transform:none;\"><p>De tweede stap is het voorbereiden van de varkensschouder voor het roken. Je hebt verschillende mogelijkheden. Je kunt de schouder eerst pekelen door 4 liter water te mengen met 240 ml koosjer zout en 240 ml kristalsuiker of bruine suiker. Voeg ongeveer twaalf hele peperkorrels toe en dompel de varkensschouder onder in de pekelvloeistof. Laat de schouder 4 tot 24 uur in de pekel liggen. temperatuur moeten bewaken en reguleren, is de volgende vraag altijd: welke saus gebruik ik?<\/p>\n<p>Voor deze saus heb ik gekozen voor een unieke en heerlijke saus uit het zuid-centrale deel van Mexico, bekend als Mole Oaxaca of Mole Negro. Het is een ingewikkelde saus waar je de hele dag mee bezig bent. Je kunt ongeveer 4 uur voorbereidingstijd besparen door een kant-en-klare mole-basis te gebruiken, en die is ook lekker, maar smaakt niet helemaal hetzelfde als dit style=\"--awb-text-transform:none;\"><p><strong>Om de saus te bereiden:<\/strong><\/p>\n<p>Verhit het reuzel in een pan en voeg de tomaten, tomatillo&#039;s, uien en jalape\u00f1o&#039;s toe. Fruit tot de uien doorschijnend zijn. Week de ontpitte chilipepers in een kom, voeg ze toe aan de pan en voeg de kippenbouillon en het weekwater van de chilipepers toe. Voeg de kaneelstokjes en zwarte peperkorrels toe, breng aan de kook en laat sudderen tot de tomaten, tomatillo&#039;s en chilipepers zacht zijn en uiteenvallen. Voeg alle geroosterde noten, oregano en zwarte peper toe en laat dit koken tot de noten helemaal zacht zijn. Gebruik een staafmixer (de makkelijkste manier) om alle ingredi\u00ebnten glad te pureren. Voeg vervolgens de chocolade toe en laat deze volledig smelten, onder voortdurend roeren. Voeg dan de bruine suiker toe en laat nog dertig minuten sudderen. Breng op smaak met zout. Als de saus te dik is, verdun deze dan met kippenbouillon.<\/p>\n<p><strong>Samenvattend:<\/strong><\/p>\n<p>Het belangrijkste is om een stuk vlees van goede kwaliteit te gebruiken, zoveel mogelijk verse ingredi\u00ebnten, de tijd en temperatuur goed in de gaten te houden en alles dubbel te controleren om ervoor te zorgen dat je gerookte varkensschouder perfect is.
