De meeste mensen pekelen hun varkenskarbonades omdat dit het vocht in het vlees behoudt, wat een soort vangnet biedt als het vlees te gaar dreigt te worden. Een andere reden is dat het de karbonade gelijkmatig kruidt en de smaken goed in het vlees laat trekken.<\/p>\n<p>Je hoeft niet te overdrijven als je je varkenskotelet meeneemt. Koteletten zijn niet zoals kalkoen, en 30 minuten kan wonderen doen. Je kunt je gepekelde varkensvlees twee uur laten marineren voordat je het grilt.
